Hummus Veggie Wrap

A delicious start to the Spring! Fresh veggies! Yum!

Ingredients:
Whole grain tortilla wraps: 1 pack
Red peppers: 2 whole
Spinach: 2 cups
Cucumber: 2 whole
Crumbled feta cheese: 1 cup
Olives: 1 cup
Green onions: 2 whole
Plain hummus or roasted red pepper hummus: 1 container
Directions:
Take the tortilla and spread about ½ tbsp of hummus onto it. Then place a sprinkle of feta cheese, sliced green onions (1/2 tbsp), sliced roasted red peppers (4 slices), spinach (1/4 a cup), sliced cucumber (1/3 of the cucumber), and sliced olives (2 tsps) to the wrap. Then roll the wrap up and cut in half. Enjoy!
